It's interesting to note that Ramsey's procedure is from Escoffier, who permitted chefs to scramble eggs over direct heat instead of a double-boiler, as was done in pre-modern kitchens. Personally I like my scrambled eggs with curds.

I’m sure you’re completely right. I’ve been there once, and all I remember can be summed up in a 2 word review: nice patio
